Times change the Merchant hotel is a place of antique filled, Victorian grandeur.

It looks and feels expensive, The Bar looks like the place you drink a fine Cognac or expensive Single Malt Whiskey, but it is the Stylish cocktails that have given this bar its prestige.

It doesn't seem that long ago that Belfast was making the news for war, it's almost hasd to imagine a decade later it has the style to give us the best Cocktail bar on the planet, out doing Cities like New York, London, Paris, Tokyo, Hong Kong, Sydney with all these cities leading the world in new age bars.

The bar has introduced a unique concept called the Connoisseurs Club; it's the concept of Sean Muldoon, The Merchant Hotel Bar Manager and Steven Pattison. Pretty simply it takes classic cocktails and offers different quality spirit mixers, that they call Silver, Gold, Platinum, this is to encourage guests to try premium spirits in Cocktail. The truth is in many cases to mix such wonderful products in cocktails is an obscene opulent waste and most cocktail bartenders with any pride would be ashamed to do such a thing, but they just got rated the best Cocktail bar in the world so they know better than me!

On a whole this is an exceptional cocktail list, created with great passion and the standard of mixology is exceptional and the bartenders are exceptionally well trained.
