Creating Cocktail Infrastructure

Getting the most out of cocktails in a bar can be a tough operation, so many bars think just having nice cocktails is enough to have a successful cocktail menu however this is very rarely the case.

Cocktail mixology is in short, a theatrical performance. Part of the joy of ordering a cocktail is watching the bartender create a master piece, muddling, stirring, shaking, slapping & garnishing. It is important to have cocktails that you can make in front of your bars guests. Your guests will also enjoy your cocktails much more if they see the effort that has gone into making it for them.

If you make a cocktail in front of the guest you also have other guests at your station asking what you are making & they may order a cocktail. You can also acknowledge any guests that may be waiting by telling them your just making a cocktail & will be with them shortly. On many occasions you will also have guests happy to wait extra for their drinks because they are enjoying watching you mix a cocktail or 2.

Another possibility is you may have a guy at the bar whom doesn’t drink cocktails however he works with a girl who loves cocktails & so therefore after seeing your bartenders mix up beautiful cocktails invites her to your bar.

If you do not make cocktails in front of the guest so many customer service opportunities are lost & it may also effect your bar efficiency.

So what needs to happen for this to be possible, firstly everything the bartender needs to mix the cocktails on your cocktail menu must be in close proximity.

So what may your bartenders need to mix a cocktail

Well we can be pretty sure that you will have an ice well on each bartending station The juices & soft drinks you use in your cocktails should go in the juice well if you don’t have enough room for all the juices you use in the cocktails on your cocktail menu look at smaller juice containers or simplifying your cocktail menu.

Different cocktails use different Glassware you should have your cocktail glassware in close proximity to each bartender station, if this goal is unachievable try to simplify the glassware you use. A Martini must always go in a martini glass however most cocktails can go into a simple standard glass.

The Fruit, Herbs, Sugar & cocktail mixing equipment used in your cocktails again needs to be in close proximity to the bartender stations so either on the station or directly behind on the back bar.

Finally the liquor that is used in the cocktails should be well set up on the back bar although in poorly designed bars which is most this isn’t possible the best solution can sometimes be to reduce stock. A lot of bars carry dead stock that a great salesman convinced them they should have but never sells, better to have more stock you actually use than a large range of products that just take up room on your back bar.

A good cocktail menu is one that can be made with maximum efficiency, to a high standard whilst enhancing the bars image & customer service.

It is important to select a cocktail list that is of a size & style that is within the capacity of your bar to make efficiently & effectively.

A good test is to see how long it takes your top bartender to mix 5 different cocktails & then imagine the effect on a busy Friday night when the guest also pays by credit card.

It is important to do a staff training on how to make the cocktails on your cocktail menu if there is one thing that looks bad in a bar it is bartenders looking at cheat sheets because they do not know your bars cocktails. In the cocktail training don’t forget to also focus on how to efficiently make the cocktails & customer service whilst mixing cocktails.

Cocktails are a great way to improve a bar & attract extra female clientele. If cocktails are made efficiently & taste great they will enhance the image & appeal of your venue.
