Bio of Joel Scholtens Lindsay

From 2005 to 2008 Joel Scholtens Lindsay started Earth Bar Consultancy & Services providing bar consultancy & services to clients that include The Taj Mahal Hotel Mumbai India, The Taj West End Hotel Bangalore India, Captain Brien's Seafood & Raw Bar Marco Island Florida USA, Mardi Gras Promotions Mumbai India, Mondo Bartender, Think spirits Sydney Australia, Sota Events , DFS International, Entertain Oz Melbourne, Suntory Australia, Van Goth Vodka, Skyy Vodka, Private Energy Drinks & The Equilibrium Hotel Sydney & for many corporate & residential cocktail parties.

Also building one of the largest bartending website on the internet www.earthbar.org including an online informational bartending magazine.

In early 2008 Joel did a Major Seminar for Bangalore top Bartending students at PES College, the top students from Bangalore leading hospitality colleges where invited. Channel 9 Bangalore recorded the seminar & replayed it as 2 1 hour specials.

Blue Bar at Taj West End hotel wins best bar in Bangalore 2007 under Joel's guidance. was featured flair bartending in an episode of the TV show Mixing With The Best as well as footage of me Flair Bartending being used for the shows TV advertising commercial campaign.

In 2004 worked with Mondo Bartender doing major corporate Events & parties.

Joel travelled to Malaysia to be a Celebrity Flair Bartender for Martells Cognacs the Art of Flair promotion I spent 7 weeks travelling Malaysia doing 3 Flair bartending shows a night, teaching bartenders how to mix Martell cocktails, Teaching bartenders basic flair bartending tricks, I created a unique martell cocktail list, I created rules, judging criteria & judged Martells Flair bartending competition. I also Did photo shoots & media relations for Martell Cognac.

Also in Malaysia Joel conducted 6 5 hour bartender Master Class’s, the program was for Malaysia’s top bartenders, the programs training focused on customer service, modern cocktail mixology & Flair bartending.

Mondo owner Hayden Wood, author of liquid kitchen cocktail books & former world flair bartending champion wrote Joel Scholtens Lindsay is the King of Flair in Australia, Greece, Holland & the UK. In late 2003 to late 2004 for 14 months Joel was Bar Supervisor for the opening team of the lounge bar at the Sofitel Wentworth Sydney position included assisting with creation & implementation of bars infrastructure, maintaining service standards, ordering of stock & equipment, staff rostering, providing input into products carried in bar & cocktail menu.

In 2003 Joel travelled to Vietnam for 1 week to provide consultancy to the Window of Hanoi Bar at the Sofitel Hanoi Plaza Vietnam. The job included making a detailed report for the hotels food & beverage manager on the bars services & how they can be improved their bar, the report was mainly focused on customer service of each individual staff member & where skills needed to be improved.

In the European summer of 2003 Joel was Bar Manager at Parachute Club Ios Greece doing fire flair shows on the clubs roof in the 1st hour the venue was open then bartending & running the venue when the owner was absent. Before that working as bar manager of Mr Beans Bar in Kalvos Corfu Greece a small beach side cocktail bar running all aspects of the bars operations. Joel also had the responsibility of creating an ordering system, costing drinks, creating a financial system for the bar & creating the bars cocktail menu.

For 14 months between 2002 & 2003 Joel worked for The Livingroom Birmingham, Islington London & Smithfield London as a shift supervisor/ Flair cocktail bartender. Joel was a member of Islington’s opening team, which involved 6 weeks of training, team building & setting up the bar. Joel also had to pass a bartending exam to work on the bar. The livingroom is currently considered to be the UK top flair bartending chain & the livingroom Islington opened with 5 of the top 15 flair bartenders in the UK. It was a Livingroom standard that all bartenders had to pass a pour test daily to work on the bar. Joel’s duties as shift supervisor included running the shift, organising staff meal breaks, checking that bar was properly prepped for night shift, conducting pour tests, end of month stock take, ordering fruit, liquor & flair training of bar rookie. 

Whilst working in Birmingham the bar won theme magazine Best bar in the Midlands

Joel was also was part of the Livingrooms events team doing corporate events, Joel spent 2 weeks at the Birmingham motor show as well as events in Liverpool, Manchester & Oxford.

Joel also did events in Scotland, Norway & England for London Bar Services

14th in the UK Flair Bartending League, 

2nd Roadhouse Tandem Flair bartending International, 

Entered in 10 Roadhouse flair bartending championship events, winning 2 man of the match awards, with a best finish 6th.

In late 2001 to early 2002 Joel spent 6 months working as Assistant bar manager of Rockwell’s Bar at the Hilton Trafalgar Hotel London England. The hotel was a new lifestyle concept, Rockwell’s bar was a bourbon concept bar with a selection of over 120 different varieties of bourbon & American whiskey available. Rockwell’s success however came from its cocktail menu created by the bar consultant Jason Fendick who is currently recognised as the world’s top cocktail mixologist. Rockwell’s was a popular hangout for celebrities & London’s wealth. In Joel’s time at Rockwell’s the bar won the prestigious Evening standard Newspaper best Bar in London

Joel’s duties at Rockwell’s was to implement standard operating procedures, staff rostering, ordering of stock, set up of par levels, keep log of glass wear & equipment (Rockwell’s had over 500,000 pounds of spare Glass wear & equipment), cash up for 6 tills, supervise bar backs, Entertaining VIP customers, bartenders & wait staff with staff levels between 10 & 20 depending on the night.

Rockwell’s was considered to be the Hilton hotels flagship bar in London with a goal of taking Hilton Hotels to a new market with a more personalised style of service. 

The opportunity to work at Rockwell’s came from working as bar supervisor for 6 months at the Hilton Heathrow Dancers Bar, Joel first came to the attention of the Hilton Trafalgar’s Human Resources manager when doing a flair bartending show at London’s employment expo.

After 4 months at the Hilton Heathrow England’s busiest hotel & increasing bar sales by 15% September 11 happened & head office decided to cut the Food & Beverage team by 50% with a drop from 8 staff a night to 4, Dancers Bar actually had a 10% increase in sales, an average of 97% on mystery customer reports & worked of 11% wage cost, In the 6 weeks that followed.

Joel’s duties at the Hilton Heathrow included order stock & equipment. Running the day to day operation of the bar.

From 2000 to early 2001 Joel was a bartender in Sydney most famous bar the historic world heritage listed Marble Bar in the Hilton Hotel Sydney. The Marble Bar was one of Sydney busiest nightspots at night with live music 6 nights a week & also a tourist attraction. The Marble Bar was focused on being a fun bar with staff actively encouraged to bar dance & flair. It was extremely popular during the Olympics & worked off a less than 10% wage cost. It also hosted the ABG national bartending championships (Joel was at the time an ABG committee member) & Suntory competition’s which Joel helped to organize.

Also completed Hilton human resources training courses in 5 Star customer service, Telephone skills, Handling customer complaints & Product knowledge.

Joel was also Awarded a Club Suntory Silver shaker for help in organizing ABG & Suntory bartending competitions.

For 14months from 1998 – 1999 Joel worked as Bar Manager at Coconut Beach Rainforest Resort at Cape Tribulation Far North Queensland situated in the in the World Heritage Daintree national Park 5 hours drive north of Cairns. One of only 3 places in the world where the reef meets mainland rainforest in the world. The resort was an Eco Resort with great challenges & the bar had a massive focus on tropical cocktails. The bar being situated in the tropics had an abundance of unique fruit to use in its cocktails, however with the fruits all being seasonal & with the time periods involved in replacing liquor stocks. I had the challenge of constantly creating new cocktails, as the cocktail menu had to be frequently updated.

Joel’s duties at included Running all bar operations, Rostering staff, after hours duty manager, afternoon restaurant manager, creating cocktail menu’s, all staff beverage training, order stock & equipment, running all financial aspects of the bar.

In 1998 Joel spent 4 months working as a Banquets Supervisor at the 5 star Reef hotel Casino Cairns. Duties included running the bar, waiter for functions, setting up plus pack up for functions & corporate events. Co-coordinating a small team to run events. I also did shifts in room service, the casino bar & Concierge in weeks with small numbers of functions.

For 5 ½ years between1991 & 1997 Joel worked as a bartender at Reactor 1 night club at Panthers World of Entertainment Penrith Leagues club) the largest club in the southern Hemisphere. 2 busy high speed bars, with 1 Cocktail bar open for 4 hours a night. Also used to work at the clubs football stadium.

Penrith Leagues club education & human resources department courses completed include Responsible service of alcohol, Kitchen safety, Tray service, Cash & cash handling, Micros UWS, Prepare & serve drinks & Exceptional customer service.

In 1995 Joel spent 6 months as bar manager of Arizona’s Penrith. A popular restaurant with a large focus on cocktails. Joel’s role encompassed creation of cocktail menu, staff rostering & ordering of stock & equipment.
