Spanish Apple

The Spanish apple is roughly based off Apple Pie

It contains Sherry, Amaretto, homemade Green Apple Syrup, Stewed Red Apple and Biscuit.

I name it Spanish Apple because Sherry is from Spain.

At the Taj Palace hotel New Delhi, I am currently the hotels Bar Consultant/ Mixologist; I have launched an Internal cocktail competition.

Last Year One of my bartender Hemant Pratik can 5th in Deageo World Class, World final. Came 2nd in the Angostura Cocktail final India, Won the Bacardi Legacy India another bartender I trained in Bangalore Blue Bar Akshar also won it last year . My goal is to now develop the next generation of Taj Palace mixologists, So the hotel cocktail Legacy continues.

Bartenders are set challenges; one of these challenges was to create a cocktail based on a desert, the other Apple pie.

As part of the training I taught the competitors how to make some homemade ingredients.

I cooked up some stewed Red Apple and some Green Apple Syrup which has a lovely sweet and sour taste.

Taking these ingredients back to the bar, I gave the stewed apple a bit of a muddle, added some Green Apple syrup.

The hotel currently has a large supply of Sherry, The Honest truth is I Very rarely use it even though every time I have tried a cocktail made with sherry it has tasted fantastic.

The problem is not many customers want to drink a cocktail made with Sherry, even though they probably have never even tried Sherry.

Sherry is a fortified wine made from white grapes that are grown near the town of Jerez in Spain and fortified with brandy. In Spanish, it is called vino de Jerez.

I then added a touch of Amaretto the secret to using amaretto is not to use much as it can quickly overpower a Cocktail.

The drink came out with a love sweet Apple and Sherry taste with delicious nutty notes.

I then put the drink into a Martini Glass with a rim of crushed up biscuit.

To finish the drink in a small glass on the side I added a small scoop of Ice Cream, with both stewed Green Apple and Red Apple lightly drizzled with Sherry and Served with a spoon.

I was looking to create more than a cocktail, I wanted desert!

I then had enough of stewed apple left for 1 more cocktail I decided to offer it to lady who was celebrating a birthday

you know you have happy customer when you hear the lady say to her friends "wow try this" and the drink is gone in about 2 minutes

She later told me "I especially liked the small glass of stewed Red and Green Apple with ice cream drizzled in Sherry on the side"
