Autumn Fashion 
Created by Joel Scholtens Lindsay for the Blue Bar, Taj Palace Hotel, New Delhi When I first arrived at the Blue Bar New Delhi through word of mouth I gained a loyal following for the Old Fashion, a Cocktail that I have great passion for. It was more than just the cocktail, it was the fact they saw me crafting simple ingredients for 6 to 8 minutes and the love I put into making every Old Fashion that added to the taste. According to me the Old Fashion is the best cocktail ever created, when mixed well. Being a passionate mixologist I am always looking to create something new, I had some Apricot puree in the bar which was originally planned for use in another concept cocktail. As a child till this day part of everyday life is Apricot Jam sandwiches, I love my Apricot Jam so I guess it's only natural that Apricot although not the world's most popular fruit occasional makes it's way onto my Cocktail menus. I mixed some Apricot with some Makers Mark Bourbon and knew I needed something to add that touch of sweetness; I choose Caramel sauce as I already knew that Caramel matches Makers Mark Bourbon from a past creation and found it added a nice subtle creaminess that balanced out the Apricot. I also Love caramel, lots of my favourite deserts as a child contained Caramel, its a very versitile flavour. Initially when I created this cocktail I used my own homemade Plum bitters however in the final tweaking of the drink, I found Angostura Orange Bitters and an orange twist gave to cocktail a better balanced taste. The Final taste is still very Old Fashion in style and taste, with a strong Bourbon taste> The Apricot, Orange and Caramel are more background notes that add a unique twist on one of the greats. I named the Cocktail Autumn Fashion because the Apricot just gave the Cocktail a feel of autumn and the Fashion is after the Old Fashion which inspired the creation. For those reading in America Autumn is your Fall. I guess one of the joys of creating the Autumn Fashion it is based off my favourite Cocktail and contains a couple of my Favourite flavours, Apricot and Caramel. I just prey I have done the Old Fashion justice.
