Cartel – Bar Manager
Whilst working at the Westin Hotel I was given the opportunity to head up one of NZ’s leading cocktail bars, an opportunity that I couldn’t turn down. I am responsible for all aspects of the business from menu creation and delivering award winning service to marketing and the business aspects of running the bar. Whilst tending bar at Cartel I managed to also take the title of 2009 Hancocks NZ Bartender of the Year

Brand Ambassador – Ian McAteer & Associates
I am currently employed as Brand Ambassador for a range of products imported by Ian McAteer & Associates including Chartreuse, Fernet Branca, Underberg and their related brands. I am responsible for promoting the brands to the on-trade as well as holding trainings, consulting and organising events involving the brands.

In January I started up my own company to provide liquid fine dining experiences to parties, functions and corporate events as well as consultancy to liquor distributors and producers. Using a network of some of the best bartenders in the country I have been involved in hugely successful events such as: Taste of Auckland, Mercedes Benz E-Class launch and numerous private parties.
Jan 2009 – July 2009,
Westin Hotel Auckland – Head Bartender
I joined the Westin Auckland to further develop my experience and skill base, this time in a formal hotel environment for the world’s largest luxury hotel group, Starwood. In my short time at the Westin I have revitalised the drinks lists across 3 outlets, implemented a beverage pricing system, held weekly training sessions for all bar and restaurant staff and am currently developing a completely new stocktaking system.

Suite Bar – General Manager
Upon returning to Auckland from Havana as a guest of Havana Club and representing New Zealand in the 42 Below Cocktail World Cup in Queenstown, I began work as the General Manager at Suite Bar. In this position I was responsible for all aspects of management; including marketing, business development and strategy, supplier and account maintenance, as well as being involved in a hands on capacity working behind the bar on a daily basis.
I developed excellent relationships with a number of global and national brand ambassadors as well as reps from all the major liquor companies.
During my time at Suite and under my leadership, the bar has succeeded in garnering a number of accolades, including:

I’m also involved with Remix Magazine as their cocktail feature writer.
Through the contacts I have made whilst at Suite I have been involved in education seminars for organisations such as the NZ Institute for Food Science & Technology and the Aficionados Society.
Aug 2006 – July 2007,
Bar3 & Bellota – Duty Manager
I began working under the auspices of one of the world’s premier hospitality organizations in August of 2006. My roles at both Bar3 and Bellota meant that I was responsible for ordering, stock take and the rostering of staff. Under the mentorship of Andy Ruzich, one of New Zealands top mixologists, I utilized my time at Bar3 to focus my skills and experience on fulfilling my potential in a service/mixology context. I personally designed and presented the official cocktail for the AK07 Auckland festival in association with Pernod Ricard and Skycity; drove the Bar3 team to win a prestigious Havana Club award and develop the largest cocktail list in Auckland.
The success I enjoyed working with the team at Bar3 resulted in the decision to move to a more challenging role at Bellota – taking on a more comprehensive managerial position, as well as seeking to complement Peter Gordon’s fine dining experience.
Feb 2005 – March 2006,
Gylly Beach Ltd – General Manager
Working as acting General Manager, I was responsible for an increase in sales that included a 65% rise in bar takings and a 300% increase in the quiet winter months as a result of a series of marketing drives I developed and executed. Successfully building relationships with local community groups and with Tourism advisory bodies also contributed to this achievement.
I established The Gylly Beach complex as a sustainable business leader; recognition of which was cemented in the Cornwall Sustainable Awards 2005 (our first year of entry), as well as in a silver medal in the Cornwall Tourism Awards. I decided to leave Cornwall to visit New Zealand
Dec 2005 – April 2006,
Sustainable Development Consultant
Starting in December of 2005 and gaining momentum until I left for New Zealand, I developed on the consultancy work I had been doing for Cornwall College Business School. Based on the schemes that I had initiated at the café I was asked to run 3 day training sessions in Sustainable Development for Cornish business leaders as well as be a guest speaker at several events including the Cornwall Sustainable Tourism Network Christmas Conference.
Feb 2004 – May 2004:
The Greenroom – General Manager
The Greenroom is a nightclub/bar at which I was responsible for all aspects of the day to day running of the business; including producing accurate accounts, marketing, stock levels, staff rotas, cleaning, organising music and security. Turnover rose by over 400% during the short time that I was involved at the Greenroom. I left to take an opportunity to travel around Asia, something I had dreamt of since childhood.
