Employed by the Savoy Hotel , set up Pangaea nightclub, Electric Bar lounge, the English House pub/restaurant and the first ICE Bar in Africa.

Mainly involved in the pre opening logistics and planning for the first month, then developed all the beverage, food, marketing and all policies and procedures. Full accountability of all P&Ls, budgets, forecasts, and promotions.

Responsible for recruiting, training, purchasing, cost controlling and day to day operations adhering to Savoy’s 5 stars standards.

Created the drinks list and implemented regular training for the bar staff. In charge of all drinks liaising and retrospective deals.

Helped the bar achieve excellent standards and product knowledge and worked closely with the GM overseeing the P&Ls, and financial aspects of the Bars.

Achieved or surpassed all targets within the first month of taking charge.

Winner of the best cocktail bar of the year 2006 in Wales.

Mar 06 to Sep 06: Beverage consultant
Nikki Beach Sardinia. Porto Cervo, Italy

Initially in charge of bartenders training and bar logistics then of the operation of all bars within the beautiful beach club in the Grand Hotel in Porto Cervo Resort, operating for the summer season. Also involved in all aspects of cashing up, stocktaking and branded operations training.

Was chosen to work at the Nikki Beach VIP Lounge for the Cannes films festival and the Venice film festival 2006.

Apr 05 to Mar 06: Bars Manager
Cafe de Paris, London

In charge of this opulent night club which hosted many high profile events and with it’s 815 capacity had 5 bars within the building and a bar personnel of 15 highly trained professionals from all over the world.

Wrote schedules each week, counted and controlled the stock take, organized and ran the financial aspects of the bars, hired and trained the bar staff.

Since the reopening of this nightclub I have been involved with the development of the concept from a drinks perspective. My role within the bar has been as a consultant, developing the cocktail menu, recruitment and training of key personnel for the bar. Winner of “London best club award” 2004/2005/2006

Initially employed as a consultant I helped develop the cocktail menu for Sketch and was offered a position as bar manager of the exclusive “Friends Bar” within the venue. I primarily worked alone in this position, delivering first class service to exclusive clientele and helping to organise and deliver celebrity events on a regular basis.

This exclusive private members bar gave me first hands on experience of all aspects of bar management. I was responsible for staff recruitment and training, ordering, processing and management of stock, cashing up, delivering profitable cocktail menus and organising events for the members. The bar was nominated as “Customer Service bar of the year” by Flavour Awards trade magazine 2002.

My employment within the Urbium Group began with me running the VIP Coral Bar at Sugar Reef. Staff training, stock management and first class customer service ensured that the bar was continually surpassing company targets and made it one of the top bars in London at the time.

Light Bar, St. Martins Lane Hotel (Schraeger Ltd, London

My position within the hotel began in the restaurant of St Martins Lane. After training staff within the restaurant bar I was promoted to the Light Bar, the exclusive cocktail bar in the Hotel. This experience gave me a thorough understanding of the standards and expectations required to operate one of London’s leading hotel bars. Staff training, product knowledge and stock management were key to my success with this position.

Drinks Consultancy/ Events Management/ Cocktail Competitions

Throughout my career I have been approached to work closely with drinks brands to develop cocktails for promotional purposes. Such companies include, Appleton Estate Jamaica Rum, Pernod Ricard, Monin Syrups, Diageo, Bacardi Brown-Forman and many more.

Exclusive events I have been approached to work at include, MTV Awards, 20th Century Fox, BBC, Movie Premieres, London Fashion week and BAR 02/03/04/05/07

Staff trainer at the MTV Music Awards week in “Nasa” nightclub, Copenhagen, Denmark. 2/11/06 to 10/11/2006.

To ensure I am continually aware of industry developments I enjoy entering cocktail competitions and developing new drinks. I won several competitions, including:
