  Bio of Jason Folomu

Jason Folomu is currently considered to be one of Australia’s foremost experts in wine, He has also received acclaim for his skills as a cocktail mixologist & flair bartender. Jayson Folomu has also consulted on some of Sydney best bars. His commerce experience also makes Jayson the right person to get the most out of a bar financially.
From 2005 to 2006 Jayson worked as bar assistant manager & Sommelier for Blue Horizon at the Shangri La hotel Sydney. Blue horizon is among Sydney’s most upmarket bars overlooking Sydney Harbour. Reporting to Bar Manager & the Director of Food & Beverage Jayson assisted with creation Cocktail lists, P&L Budgeting, Staff Rostering, Stock-takes, Cash up reconciliations Jayson even did the occasional chef shift.

In 2004 & 2005 Jayson was the consultant who opened 3 Weeds Bar Rozelle, The Vanilla Room Leichhardt, the Bar Scene for Amalgamated Holding Ltd, The Block Penrith, The Mandalay room Kings Cross & The Ranch Ryde. Worked in conjunction with Venues on Pre Opening Concepts, Environmental Awareness & Surround Set-up, Staff Hiring, Staff Training & Development, Marketing, Back Office Administration, Food & Beverage Design, OHS Awareness, Product & Supplier Support.

  Jayson was a flair bartender David Jones Summer Launch Fashion Week for fashion labels “Fashion Assassin” & “Morrissey”
From early 2003 to mid 2004 Jayson was Bar Manager & Sommelier for the Living Room Restaurant & Bar North Sydney. Jayson reported directly to Venue Owners & was responsible for developing fresh bar initiatives using limited resources both financially and physically. Jayson managed to increase the monthly turnover by 37% and profits by 22%. Jayson developed customer incentive programs for clientele using various communication links at limited cost, realigned Point of Sale systems, Installed back office stock taking systems and administration where none existed before. The Living Room won awards for best Australian wine list & Best Cocktail Menu.

From late 2002 to early 2003 Jayson was Bar Manager, Sommelier & is still a share holder for Bambu Restaurant & Bar Sydney. Reporting to Venue General Manager Jayson Duties included General Management duties required for the efficient function of a dispense bar. Won awards for Australian bartender Magazine Best Cocktail Menu & Good Food Month Best Cocktail Menu.
In 2002 Jayson Folomu was assistant bar manager for Bar Europa Sydney. Reporting to Venue General Manager Jayson's role involved supporting GM and maintaining venue standards also Involved in the conception, development and execution of Sydney’s first Gastro bar

From mid 2001 to 2002 Jayson was Duty Manager for Kinselas one of Sydney trendiest venues. Reporting to the Venue Licensee Jayson had a basic supporting role required of a duty manager, staff management, cash reconciliations, gaming maintenance & payments, venue maintenance and supervision of 15 – 20 staff per shift
From 2000 to 2001 Jayson Folomu was Bar Manager of Planet Hollywood Sydney situated in the busiest party area of central Sydney this period took in the Sydney Olympics. Reporting to Venue General Manager Jayson was responsible for the operation of the bar, staff roster’s, ordering, staff incentive programs, staff training for a team of 3 supervisors & 12 bartenders.
