Jay Jay currently works for Blue Horizon one of Sydney�s flag ship bars with views across Sydney & one of Sydney�s top Cocktail lists. 
In 2006 Jay Jay first opened Havana Club Sydney working as Bar Manager & helping it become one of Sydney�s most stylish nightclub venues. Before moving to the Mandalay Room a new bar in Kings Cross to open the venue as Bar Manager, Mandalay quickly become one of the hippest cocktail bars in Sydney. Jay Jay has also done events for Earth Bar Consultancy & Services & the Elixir group in 2006 In competition in 2006 Jay Jay finish 8th in 42 below Vodka world Cocktail cup & was the MC for the Angostura Bitters Cocktail Competition where his comical genius stole the show 
From 2003 to early 2006 Jay Jay was Duty manager of Zanzidir Bar Newtown the number one bar in one of the trendiest area's of Sydney. Also from 2003 to 2006 Jay Jay was part of the backbone of the Mondo Bartender event team doing events in Sydney, Brisbane, Melbourne & New Zealand. In 2004 Jay Jay finished 12th in the Grand Marnier cocktail competition. From 1999 to 2003 Jay Jay travelled the world working at venues including Venetian hotel Les Vegas USA Tankan Mexico City Marbllia Spain Panjias Spain Bacardi experience Spain Beach blanc Barcelona Space Ibiza Spain Fabric London UK.
